2 C coconut milk
4 eggs
1 tsp. almond extract
2 C flour
1 C grated coconut
2 T brown sugar
4 tsp. baking powder
1 tsp. salt
2 bananas, sliced and quartered
In a mixing bowl mix wet ingredients. Add dry ingredients and stir just to combine. Fold in the bananas. Cook in a preheated waffle iron. Serve with maple syrup.
