2 lbs ground beef
1 C each chopped celery and chopped onion
2 cloves garlic, minced
1 cup chopped green pepper
1 (6 ounce) can tomato paste
1 (28oz. ) can crushed tomatoes
2 ( 14.5oz) cans diced tomatoes
5 C beef broth
1 C chopped carrots
2 C peeled, cubed potatoes
3 bay leaves
1 tablespoon minced parsley
1 tsp. paprika
1 (15 ounce) can chick peas, drained and rinsed
1 head cabbage, chopped
water
salt and pepper
Directions
In a large soup kettle, brown beef with onion, garlic, carrots,celery and green pepper.
Add tomato paste, tomatoes, potatoes,beans, and seasonings. Add cabbage and cook down a bit. Add water to cover if needed. Season with salt and pepper. Reduce heat to a high simmer and cook for 8 hours. Can serve with grated cheese if desired.
