Whole Grain Date & Nut Bars




In a large mixing bowl combine:


1 1/2 C cheerios cereal


3/4 C crispy rice cereal


1/3 C sliced almonds


3 T dry milk powder


1/2 C pitted dates, coarsely chopped


1/4 C coarsely chopped dried apricots


Preheat oven to 350 degrees F.


On the stove top combine: 1/3 C honey and 1/4 C natural salted peanut butter. Heat for 5 minutes until mixture is combined and easy to stir. Pour over cereal mixture and stir to combine. Place in a 8"X8" baking pan lined with parchment paper and then sprayed with cooking spray. Bake for 10-12 minutes of just until the bars are beginning to brown. Let cool completely in pan for at least 2 hours. Remove from pan and cut into bars.

Chewy Granola Bars




I saw this recipe a few nights ago. I made two changes; I added 1/4 C natural peanut butter and I used regular size M&M's.

Orange Juice Granola





4 cups old-fashioned oats
1/2 cup ground flaxseed
1 cup pecans
2 teaspoons ground cinnamon
1/8 teaspoon salt
1/2 cup orange juice
1/2 cup honey
4 teaspoons olive oil
1 teaspoon vanilla extract
1 cup chopped dates
1 cup dried cranberries

Directions: In a large bowl, combine the first five ingredients; set aside. In a small saucepan, combine the orange juice, honey and oil. Bring to a boil, stirring constantly. Remove from the heat; stir in vanilla. Pour over oat mixture and mix well. Transfer to a 15-in. x 10-in. x 1-in. baking pan coated with cooking spray. Bake at 350° for 20-25 minutes or until golden brown, stirring every 10 minutes. Cool completely on a wire rack. Stir in dried fruits. Store in an airtight container.

Cherry Orange Granola




Preheat oven to 275 degrees F.


In a large bowl, mix together:


6 cups old-fashioned oats (not quick-cooking or instant)


1 cup pecans


1 cup pistachios


1 cup Spanish peanuts


1/4 cup dried orange peel


Then mix in:


1/3 cup vegetable oil


2/3 cup maple syrup


1 teaspoon cherry flavor


Stir to combine thoroughly. Transfer to a jelly roll pan. Bake at 275° F. for 2 hours, stirring every 20 minutes. After the granola has cooled, stir in 1 1/2 C raisins and 1 1/2 C dried cranberries.

Six Mile High Granola



3 tablespoons unsalted butter
1/2 cup light-brown sugar
1/2 cup honey
2 teaspoons pure vanilla extract
1 1/2 teaspoons coarse salt
1/2 teaspoon ground cinnamon
1 cup water
4 1/2 cups rolled oats
1/2 cup wheat germ
1/2 cup ground flax seed
2 cups mixed nuts( I used cashews, peanuts, pistachios, almonds and walnuts)
1 1/2 cups unsweetened shredded coconut
2/3 cup dried currants
2/3 cup dried cranberries
Directions
Preheat oven to 250. Melt butter in a saucepan over medium-low heat. Add sugar, and cook until melted. Stir in honey, vanilla, salt, cinnamon, and water. Add remaining ingredients, except dried fruits, and toss. Arrange in a single layer on two rimmed baking sheets. Bake, stirring occasionally, until golden brown and dry, about 1 1/2 hours. Let cool on sheets. Transfer to a bowl, and add dried fruits. Granola can be stored in an airtight container for up to 3 weeks.

Granola


In a bowl combne: 1/3 C honey, 1/4 c maple syrup, 2T water, 1/3 C vegetable oil, 1/2 tsp. vanilla. Set aside.
In a large bowl combine: 4 C rolled oats, 1/4 C sesame seeds, 1 C Rice Krispies, 1/2 C ground flax seeds, 1/2 c sunflower seeds, 1/2 C sliced almionds, 1/2 C chopped walnuts, 3/4 C coconut. Mix together and mix wet ingredients in. Spread on 2 parchment lined jelly roll pans. cook at 350 degree F for 30 minutes being sure to stir every 10 minutes. Take out to coool and stir in 1 C dried apricots, 1 C dried cranberries, 1/2 dried apples and 1 c raisins.

Gobble Up Granola Snacks


2 1/2 cups crispy rice cereal
2 cups quick-cooking oats
1/2 cup raisins
1/2 cup packed brown sugar
1/2 cup light corn syrup
1/2 cup crunchy peanut butter
1 teaspoon vanilla extract

In a large bowl, stir together the rice cereal and oats. Set aside. Grease a 9x13 inch baking dish with cooking spray.
Combine the brown sugar and corn syrup in a small saucepan over medium heat. Heat just until boiling, then remove from heat and stir in peanut butter and vanilla until smooth. Pour over the cereal and oat mixture, and mix well.
Press into the prepared pan using the back of a large spoon. Allow to cool, then cut into squares.

Homemade Granola Bars





RECIPE INGREDIENTS:
1/2 cup butter or margarine
1/3 cup sugar
1/3 cup honey
1/4 cup flour
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon
2 cups crisp rice cereal
2 cups rolled oats
1 cup dried fruit bits
1/2 cup sliced almonds
1. Heat the oven to 350° F. Coat a 9- by 13-inch pan with nonstick cooking spray and set aside.

2. Melt the butter or margarine in a large pot over low heat. Remove the pot from the heat and whisk in the sugar, honey, flour, vanilla extract, and cinnamon. Add the remaining ingredients and mix well.

3. Transfer the mixture to the baking pan. Using a sheet or waxed paper and the palms of your hands, press the granola firmly into the pan, packing it to a flat and even thickness.

4. Bake for 20 minutes, until golden brown. Allow the granola to cool 1 hour in the pan, then transfer to a wire rack to cool completely before cutting into bars. Makes 16 to 24 rectangular bars.

Granola Bars


Granola Bars
Ingredients :

2 cups of oats
3/4 of slice almonds
1/2 unsweetened dry coconut
1/4 of sesame seeds
2 cups of chopped dried fruit (cranberries, blueberries, currants, cherries)
1/2 cup of honey
1 cup of unsalted crunchy peanut butter
2 teaspoons vanilla extract
1/2 tsp salt
Butter a 9 by 9-inch baking dish and line it with parchment paper or aluminium foil. Preheat the oven to 350 degrees F.
2) Spread the oats, almonds onto a sheet pan. Place in the oven and toast for 10 minutes, stirring occasionally. Add in coconut and sesame and toast it for another 2 minutes.
3) In the meantime, combine the honey, peanut butter, vanilla and salt in a saucepan and place over medium heat. Cook until everything combined.
4) Once the oat mixture is done, remove it from the oven and immediately add it into the liquid mixture, add the dried fruit, and stir to combine.
5) Turn mixture out into the prepared baking dish and press down, evenly distributing the mixture in the dish
6) Cool completely and cut into squares and store in an airtight container for up to a week.

Paradise Granola from Healthy Cooking June/July 2008


2 cups old-fashioned oats
1/2 cup flaked coconut
1/2 cup toasted wheat germ
1/4 cup oat bran
1/4 cup sunflower kernels
1/4 cup slivered almonds
1/4 cup chopped pecans
2 tablespoons sesame seeds
1/4 cup honey
2 tablespoons canola oil
2 tablespoons grated orange peel
1 teaspoon vanilla extract
1/2 teaspoon salt
1 cup dried cranberries
3/4 cup chopped dates
1/2 cup chopped dried figs
1/2 cup chopped dried apricots
3 tablespoons raisins
Directions:
In a large bowl, combine the first eight ingredients. In a small bowl, whisk the honey, oil, orange peel, vanilla and salt; pour over oat mixture and mix well. Spread evenly into an ungreased 15-in. x 10-in. x 1-in. baking pan.
Bake at 350° for 20-25 minutes or until golden brown, stirring once. Cool completely on a wire rack. Stir in dried fruits. Store in an airtight container. Yield: 7 cups.

Granola



6 c quick cooking rolled oats
3/4 c toasted( raw) wheat germ
1/3 C sesame seeds
1 C coarsely chopped cashews
3/4 C flaked coconut
1/2 C packed light brown sugar
1/2 C butter, melted
1/2 C honey
1 1/2 tsp. vanilla extract
1 1/2 C raisins
2 C dried mixed fruit
Preheat oven to 350 degrees F. Pour the oats into an ungreased jelly roll pan. Bake 10 minutes, turning once with a spatula after 5 minutes. meanwhile, in a medium mixing bowl, place the wheat germ, sesame seeds, cashews, coconut and brown sugar; stir to combine. set aside. Place the butter in a small pan;over very low heat, melt the butter. Remove from the heat. Add the honey and vanilla;stir vigorously until completely blended;set aside. Remove the oats from the oven, add the wheat germ mix and stir. Add the honey mix and combine. Place back on the jelly roll pan and bake 20 minutes, be sure to stir every 5 minutes. Cool completely. Store in zipper-seal bags. keeps up to 2 weeks at room temp. or 1 month in the refrigerator.

Playgroup Granola Bars

2 cups rolled oats
3/4 cup packed brown sugar
1/2 cup wheat germ
3/4 teaspoon ground cinnamon
1 cup all-purpose flour
3/4 cup raisins (optional)
3/4 teaspoon salt
1/2 cup honey
1 egg, beaten
1/2 cup vegetable oil
2 teaspoons vanilla extract
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13 inch baking pan.
In a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour, raisins and salt. Make a well in the center, and pour in the honey, egg, oil and vanilla. Mix well using your hands. Pat the mixture evenly into the prepared pan.
Bake for 30 to 35 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Do not allow the bars to cool completely before cutting, or they will be too hard to cut.

Mixed Nut Granola


3/4 C vegetable oil
1/2 C honey
4 C old fashioned oats
2 C sweetened, shredded coconut
3 C salted,mixed nuts
3 1/2 C mixed dried fruits ( I used blueberries, cherries, raisins, cranberries and golden raisins)
Heat oven to 325 degrees F. In a small bowl whisk together the oil and honey; set aside. Toss the oats, coconut, nuts and fruit together in a large bowl. Add the oil mixture and stir with a wooden spoon until well combined. Pour mixture onto two 13"X8" baking sheets, bake stirring frequently until the mixture is an even golden brown, 20-40 minutes. check and stir every 5 minutes. Remove from oven and let cool, stirring occasionally. Store in an airtight container.

Crunchy Homemade Granola


4 C rolled oats
1 C wheat germ
1C walnuts, chopped or slivered almonds
1/2 C sesame seeds
1/4 C brown sugar
1 tsp. cinnamon
1/4 tsp. salt
1/3 C vegetable oil
1/3 honey
1/3 C water
6 oz. dried fruits
Heat the oven to 330 degrees F. In a large mixing bowl, stir together the oats, wheat germ, nuts, sesame, brown sugar, cinnamon ans salt. Make a well in the dry ingredients and add the oil, honey and water. Add fruits. Toss the mixture until all the ingredients are well combined, then spread evenly on a cookie sheet. Bake the granola for 40 minutes, or until lightly browned, stirring every 10 minutes to keep the mixture from sticking. Let it cool completely. Makes about 7 cups.
