Cherry Orange Granola




Preheat oven to 275 degrees F.


In a large bowl, mix together:


6 cups old-fashioned oats (not quick-cooking or instant)


1 cup pecans


1 cup pistachios


1 cup Spanish peanuts


1/4 cup dried orange peel


Then mix in:


1/3 cup vegetable oil


2/3 cup maple syrup


1 teaspoon cherry flavor


Stir to combine thoroughly. Transfer to a jelly roll pan. Bake at 275° F. for 2 hours, stirring every 20 minutes. After the granola has cooled, stir in 1 1/2 C raisins and 1 1/2 C dried cranberries.
