Whipped Butter


In a kitchen Aid mixer whip 1 quart of heavy cream to desired consistency, add salt to taste. Chill until you are ready to serve.

Orange Cranberry Sauce


2 c. cranberries

1C orange marmalade

1 t. cinnamon

1/4 t. cloves

2 6.1oz mandarin oranges, well drained

1 c. coarsely chopped walnuts
1T dried lemon peel

Rinse and drain cranberries. Pick out stems and any soft cranberries.Over medium heat, combine cranberries, orange marmalade, cinnamon, and cloves. Cook, stirring constantly, until cranberries begin to pop. Reduce heat to simmer and add oranges , walnuts and lemon peel. Cook an additional minute and then remove from heat. Garnish with orange zest. I like to serve this at room temperature or cold.

Pizza Sauce


1 (6 ounce) can tomato paste
6 fluid ounces warm water (110 degrees F/45 degrees C)
3 tablespoons grated Parmesan cheese
1 teaspoon minced garlic
2 tablespoons honey
4 anchovies
3/4 teaspoon dehydrated onion
1/2 teaspoon dried oregano
1/2 teaspoon dried marjoram
1/2 teaspoon dried basil
1/4 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon dried red pepper flakes
salt to taste

In a sauce pan melt anchovy in a bit of the oil. Add the tomato paste and water. Now add the Parmesan cheese, garlic, honey, onion, oregano, marjoram, basil, ground black pepper, cayenne pepper, red pepper flakes and salt; mix together. Sauce should sit for 30 minutes to blend flavors; spread over pizza dough and prepare pizza as desired. It is best if the sauce is prepared a dy in advance and left in the refrigerator for flavors to blend.

sunflower Seed Chili Salsa


1 C sunflower seeds, lightly toasted
2-6 canned whole green chilies
1/4 C minced cilantro
1/4 C minced green onion
2C canned fire roasted chopped tomatoes, drained
2-4 cloves garlic minced
salt pepper and cumin to taste
Combine all ingredients in food processor with metal blade. Process briefly to preserve texture.

Crockpot Applesauce



8-10 medium apples, peeled and diced
1/2 C water
1 C sugar
1 tsp. cinnamon
Combine all ing. in the crockpot. Cover and cook on low for 4.5-5 hours. stir a few times during cooking. The applesauce will come out chunky if you prefer a smoother sauce, cool and puree in the blender. Tasty and smells great!

Similar to Chili's Salsa but Bolder

In a blender quickly pulse 2 chopped jalapenos, 2 10.5 oz cans( undrained) of Rotel Chunky tomatoes and green chilies, 2 can 14.5 oz.(undrained) Muir Glenn fire roasted tomatoes, diced, 1/2 C dried onion, 1 1/2 tsp. garlic salt, 1tsp. cumin, 1/2 tsp. sugar, salt and pepper to taste. chill overnight.
