In a crockpot, place a 2lb. pork tenderloin. Around the pork tenderloin arrange sweet potatoes( I used 2 large cans of drained sweet potatoes). In a skillet melt 2 T butter. Saute 2 medium onions, coarsely chopped and 3 medium apples, coarsely chopped. saute briefly and add to the crockpot. Season with salt, pepper and thyme. Add 1 cup of chicken broth, cover and cook on high for 6 hours. Serve with cracked wheat bread.
