Roisserie Style Chicken Salad

2 lb. boneless, skinless chicken

2 tsps sea salt
1 tsp paprika
1 tsp onion powder
1/2 T fresh thyme
1 tsp Italian seasoning
1/2 tsp cayenne pepper
1/2 tsp black pepper
1 1/2 C chicken broth
4 whole garlic cloves (optional)
1 yellow onion, quartered (optional)
In a bowl combine all of the spices, salt and pepper. Place the chicken into the crockpot. Rub with the seasoning mixture. Place the onions and garlic on top. Pour the broth on top and cook on low for 8 hours.
Place on top of a salad or use for sandwiches.
