Lamb Vindaloo

3 lbs boneless leg of lamb

1 medium yellow onion, minced

3 cloves garlic , left whole

1/2 tsp. ground  cloves

1 tsp. ground ginger

1/2 tsp. red pepper

1 T ground coriander

1 T cumin

1 tsp.  cinnamon
1/4 cup apple cider vinegar

2 chopped potatoes ("aloo" means potato)

1 28 oz. can of whole plum tomatoes

Mix all of the spice ingredients in a small bowl. Place lamb in the crockpot and rub with the spice ingredients. Place potatoes and tomatoes around the lamb.  Pour the vinegar on top and let cook onow for 8-10 hours. Serve with bread or rice or tortilla shells.
