Wheat Berries

1 C wheat berries
4 C water
1/2 carrot, peeled and cut in 1 piece
1 bay leaf
2 ts. extra virgin olive oil
salt and pepper to taste
Combine all ingredients in a saucepan. Cook until the wheat berries are tender but not mushy. Remove and discard the vegetables. Stir in the extra virgin olive oil.
