Chicken and Quinoa Pilaf

1  red onion, chopped

1/2 cup chopped celery
1/2 cup chopped carrot
1 tablespoon minced garlic
2 teaspoons ground cumin
1 teaspoon dried oregano
3 cups quinoa, washed and dried
2 C almond milk
2 C chicken broth
1 can of organic black beans, rinsed and drained
1/4 cup minced fresh cilantro or parsley (optional)

Sauté onion, celery, carrot, and garlic until they start to caramelize or turn brown. Add cumin, oregano, and quinoa Place in a crockpot with remaining ingredients. . Place 4-5 boneless, skinless chicken breasts on low. Cover and cook on high for 4-5 jours. Check periodically and add broth if necessaerry.
