Crockpot Meatloaf and Braised Cabbage

In a large bowl combine :2 lb. ground beef, 1 C chopped celery, 1 beaten egg, 1/4 C chopped onion and 1 tsp. sea salt. Form into a loaf and place into the crockpot. Pour beef broth into the crockpot to cover half of the meatloaf. Cook on high for 6 hours.
For the cabbage:Preheat the oven to 325 degrees.  Oil a 9X13 pan. Cut a 2lb. green cabbage into 8 wedges. Lay each wedge into the pan. Scatter 1 cut yellow onion and 6 cut carrots around the cabbage. Drizzle 1/4 C olive oil over the top and 1/4 C water, season with salt, pepper and if desired red pepper. Cover tightly with foil and bake for 1 hour. Remove flip the cabbage and bake for another hour. Once the cabbage is tender, remove the foil, increase the heat to 400 degrees and let the vegetables brown, about 15 minutes.
