Potatoes Baked in the Crock

5lb. red potatoes
1 C extra virgin olive oil
3 T salt
1 tsp. black pepper
Prick each potato several times with a fork. Combine the oil, salt and pepper in a bowl, rub the potatoes with the mixture.

Arrange the potatoes in a crockpot. Cover and cook on high for 8 hours. The potatoes on the bottom with get crispy.
