Easy Zucchini Bread


2 C all purpose baking mix
1 1/2 c shredded zucchini
3/4 C sugar
1/4 olive oil
3 eggs
2 tsp. ground cinnamon
1 tsp. nutmeg
1/2 C chopped nuts
Heat oven to 350 degrees F. Grease a silicon baking pan. Beat all ingredients with electric mixer on low speed for 30 seconds. Beat on medium speed for 1 minute, scraping down the sides of the bowl. Pour into prepared pan. Bake 50-55 minutes or until toothpick inserted in the center comes out clean. Cool 10 minutes. Invert onto a cooling rack. Cool completely before slicing.

This recipe looks really good. It uses FAR LESS oil than other zucchini bread recipes. I do plan on trying this, but I was wondering - did you find it dry or comparable to other moist zucchini bread recipes?

Hello Roxanne, i found this was a really good bread and comparable to other zucchini breads. I think the bread I made last night ( the zucchini apple bread) was one of the best yet, it was supper moist and excellent flavor, if you like apples that is. The applesauce made up for all of the oil that zucchini bread usually calls for.Please let me know if you try either recipe and what you think.
