In a bowl combine:2 C grated, peeled, raw potatoes, 1 small onion grated, 1 tsp. salt, 1 dash of freshly ground pepper, 1/2 C all purpose flour, 2 eggs. Heat vegetable oil in a pan to cover 1/4". Drop the potato mixture , one heaping tablespoon per cake into the hot oil. Flatten with a spatula and cook on both sides until golden. Serve with sour cream or apple sauce. Drain thoroughly on paper towels.
