Well i guess I got lazy on this one!! Here is how I made this dish:
1 medium eggplant, cut up in thin slices, drain on paper towels ( top and bottom). Season both sides with salt and pepper. In a skillet warm some olive oil. Dip each eggplant slice in beaten egg and then, italian bread crumbs.( I used about 5 eggs and maybe 4 C bread crumbs). Fry each slice until golden on each side. Place each piece on a oiled cookie sheet and bake in a 350 degree F oven for 10 minutes. Meanwhile make a homemade marinara sauce. For filling mixture I used 1 1/2 C ricotta cheese, 1/2 C grated parmesean chees, 1C shredded mozzarella, salt, pepper and parsley. Now to assemble: in a greased 9X13 i put about 1/2 c of sauce then 1/3 of the fried eggplant, 1/2 of the cheese mix, sauce and then repeated, eggplant, cheese sauce and ended with eggplant, the remaining sauce and mozzarella cheese and grated parmesean. Bake in a 350 degree f oven for 1 hour or until bubbly( covered for 45 minutes and uncovered for 15.
