Happy Easter!!




Quick Yellow Cake
2 1/4 C cake flour
1 1/3 C sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 C shortening
1 C half and half
1 tsp. vanilla
2 eggs
Combine dry ingredients in mixer bowl. Add shortening, milk and vanilla. Mix well, scrap bowl, add eggs one at a time. Mix well. Pour batter into two greased and floured 9" round pans. Bake at 350 degrees F for 30-35 minutes, or until a toothpick in the center comes out clean. Cool 10 remove to wire racks to cool completely.
Buttercream Frosting
1/2 C butter, softened
1/4 C half and half
1 tsp. vanilla
1/4 tsp. salt
4 C powdered sugar
Beat butter in mixing bowl until creamy. Add half and half, vanilla, salt and 1 C powdered sugar. Beat until well blended. Gradually add remaining powdered sugar. Can add some milk of half and half if necessary to thin out the frosting.
In between the two layers ,I warmed 3/4 C strawberry preserves until it was a good spreadable consistency. I then spread it and a bit of frosting topped with second layer and frosted the whole cake.
