Irish Soda Bread

This bread is really great. i love to make it around Saint Patrick's Day
1 1/4 C beer
4 C all purpose flour
2/3 C sugar
1 T baking powder
3/4 tsp. salt
1/2 tsp. cracked pepper
1C raisins
1/4 C butter, melted
2 eggs
Let beer stand at room temp for 30 minutes( or more) until flat. Preheat oven to 350 degrees F. Coat baking sheet with cook spray. In a large mixing bowl combine: flour, sugar , baking powder, salt and pepper. Stir in raisins. Stir in beer, butter and 1 egg until a dough forms. On a floured surface knead dough until smooth. Shape into a round loaf. Place on a baking sheet. With kitchen scissors slice an X on top of the loaf. Lightly beat remaining egg;brush over dough. Bake 55 minutes or until loaf sounds hollow when tapped. remove from pan and cool on a wire rack.
If you like a raisin bread you will love this loaf. I love this bread.
