The night before cooking, place dried northern beans in a bowl and cover to over 2" with water. When you are ready to cook the beans drain the water , place in a pan, bring to a boil. Reduce heat to low and cook the beans for 90 minutes or until tender. In a pot cook 1 lb. ditalini or shell pasta. In last 4 minuted of cooking add 3 C baby spinach. Drain all. In a pot with olive oil, brown 4 cloves of garlic and 1 medium onion, minced. Add 3C marinara sauce, 2 C chicken broth , drained pasta and spinach, 1 C grated Parmesan, salt pepper and red pepper to taste. Serve with extra cheese. For a more soupy version increase liquid or marinara sauce.
