Reuben Eggrolls

In an eggroll wrapper, layer 1-2 T sauerkraut, 1-2T chopped deli corned beef(shaved), then 1T shredded cheddar cheese, roll in eggroll fashion. Deep fry in 2-3 inches of vegetable oil, until golden brown. When done remove with a slotted spoon to a paper towel lined plate. As rolls are frying make a dipping sauce, 2-3 T Dijon mustard and 1C Thousand island dressing, stir. Serve.
