Meatloaf


3 lb. meatloaf mix
2 C Italian style bread crumbs
1/4 c dried parsley
1T granulated garlic
2 medium onions, chopped into large pieces
3 medium bell peppers, chopped into large pieces
2 eggs
salt and pepper to taste
4 C of your favorite sauce
2 C ketchup
1/2 C beef stock
3 T balsamic vinegar
6 T brown sugar
6 T bold and spicy mustard
4 tsp. Worcestershire sauce
1/2 c grated pecorino Romano
In a small bowl combine tomato sauce, ketchup, balsamic vinegar, brown sugar ,mustard, Worcestershire sauce, and beef stock. in a separate large bowl, combine meatloaf mix, bread crumbs, parsley, garlic, eggs, salt and pepper, 1C tomato mixture( in other bowl reserved), and pecorino Romano. Form into a loaf. Place 1/2 C tomato mixture on the bottom of a Crockpot, then place meatloaf. Arrange peppers and onions around the meatloaf, top with remaining sauce. Cook in crockpot on high for 8-10 hours. Serve with extra pecorino Romano cheese.
