Raisin & Walnut Zucchini Bread


4T butter
3 eggs
1 1/2 cups white sugar
2 teaspoons vanilla extract
1 cup vegetable oil
1 teaspoon allspice
1 teaspoons ground cinnamon
1 teaspoon ground nutmeg
2 cups grated zucchini
2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
1 teaspoons baking powder
1 C raisins
1 C chopped walnuts
In a saucepan melt butter. Set aside to cool. Combine flour, baking powder, baking soda, and salt. In a large bowl, mix oil, eggs, vanilla, sugar, cinnamon,allspice and nutmeg. Blend in zucchini and melted butter. Stir flour mixture into zucchini mixture.Stir in raisins and walnuts. Pour batter into two greased and floured 9 x 5 inch loaf pans. Bake at 350 degrees F (175 degrees C) for 60-70 minutes. Let stand 10 minutes before unmolding. Cool on wire racks.
