Zucchini Corn Muffins



1 C shredded zucchini
1 (8.5 oz.) Package Jiffy corn muffin mix
1 C shredded cheddar cheese
1/4 C milk
1 egg
1/2 tsp. ground red pepper
Preheat oven to 400 degree F. Lightly coat 12 muffin cups with cooking spray, set aside. In a mixing bowl combine all ingredients, stir until just combined. Bake for 11-14 minutes or until golden.
