Spicy Zucchini with Anchovy


3T olive oil
3 cloves garlic, peeled, left whole
1/2 T red pepper flakes
4C shredded zucchini
salt and pepper to taste
3T anchovy paste
Heat oil in a skillet over medium heat. Add the garlic, red pepper and anchovy. Heat until anchovy is melted. Add zucchini and saute until it becomes tender, about 7 minutes. Add salt and pepper to taste.
